Definition of Pay off

Paying off a vessel refers to the maneuver of turning the bow of the ship away from the wind. For instance, in a sailing race, a skipper might decide to pay off their boat if they have been sailing close to the wind and want to avoid the risk of being forced into a tack or jibe due to a shift in the wind direction.
